English Version
When our cook has nothing else to do she makes muffins so there are almost always muffins in the fridge. We heat them in the morning and serve with fruit and yogurt for a healthy breakfast. In recipes that call for white flour we often substitute oat flour which we make by grinding rolled oats in our coffee mill. You can also use a food processor or blender but the oats will be coarser.
Coffee, Banana, Walnut Muffins For 8 muffins
Ingredients:
– 1 3/4 cup mixed flour (1 cup oat, 1/2 cup buckwheat, 1/4 cup rice flour)
Note: you can substitute wheat flour for the any or all of above
– 2 tsp. baking powder
– 1/2 tsp. baking soda
– 1/2 tsp. salt
– 1/4 cup softened butter
– 1/2 cup packed brown sugar
– 2 whole eggs
– 1/2 cup strong coffee or Kaluha liqueur
– 1 cup mashed banana
Ingredients for muffin topping:
– 2 Tbl. walnuts, finely chopped
– 1 tsp. brown sugar
– 4 tsp. strong coffee or Kaluha
Directions:
Heat the oven to 400 degrees F. Butter the muffin tin.
In a large bowl mix the flours, baking powder, baking soda and salt. Mix well with a large spoon.
Put the softened butter and brown sugar into a small bowl. Mix well using an electric mixer, until the sugar is well incorporated into the butter. Next add the eggs one by one and mix well after each addition. Now add the strong coffee and the banana, again mixing well. Add these ingredients to the dry ingredients and mix well but being careful not to over mix.
When the batter is mixed, fill the muffin tins to about 3/4 full with the batter and bake for 15-20 minutes or until a toothpick inserted into a muffin comes out clean.
While the muffins are baking, put the walnuts and brown sugar in a small bowl and mix well.
Test the muffins with a toothpick and when it comes out dry remove the muffins from the oven. Immediately spread the 4 tsp. strong coffee or Kaluha over the tops of the muffins and sprinkle with the walnut mixture.
Indonesian Version
Muffin Kopi, Pisang, dan Kacang Walnut
Untuk 8 muffins
Bahan – Bahan :
– 1 3/4 cangkir tepung campur (1 cangkir oat, 1/2 cangkir buckwheat, 1/4 cangkir rice flour) Bisa ganti tepung terriggu untuk sebagian tepung tersebut
– 2 tsp. baking powder
– 1/2 tsp. soda kue
– 1/2 tsp. garam
– 1/4 cangkir mentega lemas
– 1/2 cangkir gula coklat padat
– 2 butir telur
– 1/2 cangkir kopi keras atau Kaluha liquor
– 1 cangkir pisang masak (di mess)
Bahan untuk di atas muffins :
– 2 Tbl. kacang walnut (dipotong halus)
– 1 tsp. gula coklat
– 4 tsp. kopi keras atau Kaluha liquor
Cara Membuat:
Panaskan oven 400 derajat F. Olesi cetakan muffin dengan mentega.
Siapkan mangkok besar, campur tepung, baking powder, soda kue dan garam. Aduk sampai tercampur bagus.
Siapkan mangkok kecil, campur mentega dan gula, kocok dengan menggunakan mixer sampai mengembang kemudian tambahkan telur, satu per satu, kocok bagus. Kemudian tambah kopi keras atau Kaluha. dan pisang, kocok bagus, masukkan kepada adonan kering (yang ada dalam mangkok besar), kocok bagus tapi jangan terlalu lama.
Setelah semua tercampur bagus, masukkan dalam cetakan 3/4 penuh tiap tempat dan taruh di dalam oven selama 15-20 menit.
Sambil menunggu muffins matang (pakai tusuk gigi untuk melihat kalau muffin sudah matang atau belum), siapkan mangkok kecil, campur walnut dan gula coklat. Aduk sampai tercampur bagus.
Setelah muffin matang, keluarkan dari oven dan taburi dengan 4 tsp. kopi keras atau Kaluha liquor dan di atasnya taruh campuran walnut dan gula coklat.
